A Simple and Balanced Meal for Everyday Wellness


This dish captures the essence of balanced eating—nutritious, colorful, and full of flavor. At its heart lies juicy, grilled chicken, marinated lightly to bring out a savory-sweet glaze that pairs beautifully with earthy brown rice. Together, they provide lean protein and whole grains, fueling your body with sustained energy.



The addition of crisp cucumbers and fresh green lettuce not only adds a refreshing crunch but also enhances the meal with hydration, vitamins, and minerals. The fresh herbs sprinkled on top provide a burst of aroma, tying the bowl together in both taste and presentation.




Ingredients (2 servings):



2 boneless chicken breasts


2 tbsp olive oil


2 tbsp soy sauce (or light seasoning of choice)


1 tbsp honey or maple syrup


1 garlic clove, minced


1 cup brown rice


2 cups water or low-sodium chicken broth


1 small cucumber, thinly sliced


1 cup fresh lettuce leaves


Salt and black pepper, to taste


Fresh parsley or cilantro, chopped (for garnish)



Instructions:


1. Cook the rice: Rinse the brown rice under cold water. In a pot, combine rice with water or broth, bring to a boil, then reduce heat and simmer for 35–40 minutes until tender. Fluff with a fork.



2. Marinate the chicken: In a small bowl, mix olive oil, soy sauce, honey, garlic, salt, and pepper. Coat the chicken breasts and let marinate for at least 20 minutes.



3. Grill or pan-sear the chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for about 5–6 minutes on each side, until golden brown and cooked through (internal temperature 165°F / 74°C). Rest for 5 minutes, then slice.



4. Prepare vegetables: Wash lettuce and arrange as a base. Slice cucumber into thin rounds.



5. Assemble the bowl: Add a portion of rice, sliced chicken, fresh lettuce, and cucumber slices into a bowl. Garnish with chopped parsley or cilantro.
